  1. Toss chicken wings with fish sauce, garlic, salt and white pepper. Rest 20 minutes. Heat the oven to 200C.
  2. Dust with rice flour. Set on a rack over a tray and drizzle vegetable oil.
  3. Bake 40 minutes, turning once, until the skin is crisp.
  4. Mix more fish sauce with honey, lime juice and chili.
  5. Toss the hot wings in the sauce. Scatter coriander and serve with lime.
