  1. Soak the glass noodles in boiling water until flexible, then drain. Mix oyster sauce, fish sauce, soy sauce, sugar and white pepper.
  2. Toss the chicken thighs with a little soy sauce.
  3. Heat vegetable oil in a wide pan. Cook onion 20 seconds, then the chicken until almost done. Add garlic and broccoli stems.
  4. Push aside, scramble the eggs, then toss in broccoli leaves, noodles and sauce.
