  1. Whisk flour, baking powder, salt, eggs, soy sauce and dashi to a thin batter.
  2. Dice the octopus. Chop the spring onion.
  3. Mix Worcestershire sauce, ketchup and a splash of soy sauce.
  4. Heat the takoyaki pan with vegetable oil until very hot. Fill the hollows with batter, add octopus and spring onion, and turn with a pick until round and gold.
  5. Top with the sauce, mayonnaise and nori. Serve hot.
