  1. Toss the pork loin with salt, egg and cornstarch. Mix ketchup, rice vinegar, soy sauce, sugar and pineapple juice from the can into a sauce.
  2. Heat vegetable oil over medium-high heat. Pan-fry the pork until golden and cooked through, then set aside.
  3. Stir-fry onion, red pepper and pineapple until the pepper softens.
  4. Pour in the sauce. Return the pork and toss until glossy. Serve.
