Method

  1. Season the pork tenderloin with salt, black pepper and cumin. Sear in olive oil on all sides.
  2. Add apple cider and chicken stock to the pan. Roast at 200C for 15 to 18 minutes until the pork is just cooked. Rest.
  3. Saute the apple in butter in the same pan. Stir in Dijon mustard and the roasting juices. Boil until slightly thick.
  4. Slice the pork and spoon the cider apples over it.
