Method

  1. Peel the potatoes, cut them into 1 cm chips and fry them in hot oil (180 °C), 6-8 minutes, until golden and crisp. Drain on kitchen paper, season with salt and set aside.
  2. Season the steaks with salt, pepper and the chopped garlic and fry them in very hot olive oil, 1-2 minutes per side, until browned outside and pink in the middle. Set aside.
  3. In the juices left in the pan, add the white wine and the butter, scrape the base and let it reduce for 2 minutes, until you have a glossy sauce.
  4. Fry the eggs over medium heat, 2-3 minutes, whites set and yolks still runny.
  5. Serve the steak with the egg on top, the chips alongside and the sauce poured over.
