Method
- Peel the potatoes, cut them into 1 cm chips and fry them in hot oil (180 °C), 6-8 minutes, until golden and crisp. Drain on kitchen paper, season with salt and set aside.
- Season the steaks with salt, pepper and the chopped garlic and fry them in very hot olive oil, 1-2 minutes per side, until browned outside and pink in the middle. Set aside.
- In the juices left in the pan, add the white wine and the butter, scrape the base and let it reduce for 2 minutes, until you have a glossy sauce.
- Fry the eggs over medium heat, 2-3 minutes, whites set and yolks still runny.
- Serve the steak with the egg on top, the chips alongside and the sauce poured over.
