Method
- Bring 4 litres of water with 1 tablespoon of coarse salt to the boil. Once boiling, cook the spaghetti for 8 to 10 minutes, until al dente. Drain, keeping a ladle of the cooking water.
- Heat the olive oil in a wide pan and sweat the chopped onion, the sliced garlic, the grated carrot and the diced tomato over medium heat for about 8 minutes, until the onion is translucent and the tomato has broken down.
- Add the minced meat, break it up with a wooden spoon and brown it over medium-high heat for 8 to 10 minutes, until it releases no more liquid and is well browned.
- Add the tomato pulp, the oregano and the reserved cooking water. Let it reduce over low heat for 10 minutes, until the sauce thickens, and adjust the salt.
- Toss the spaghetti through the sauce, leave it 1 minute over low heat to take on the flavour and serve.
