Method

  1. Bring 4 litres of water with 1 tablespoon of coarse salt to the boil. Once boiling, cook the spaghetti for 8 to 10 minutes, until al dente. Drain, keeping a ladle of the cooking water.
  2. Heat the olive oil in a wide pan and sweat the chopped onion, the sliced garlic, the grated carrot and the diced tomato over medium heat for about 8 minutes, until the onion is translucent and the tomato has broken down.
  3. Add the minced meat, break it up with a wooden spoon and brown it over medium-high heat for 8 to 10 minutes, until it releases no more liquid and is well browned.
  4. Add the tomato pulp, the oregano and the reserved cooking water. Let it reduce over low heat for 10 minutes, until the sauce thickens, and adjust the salt.
  5. Toss the spaghetti through the sauce, leave it 1 minute over low heat to take on the flavour and serve.
