  1. Warm the beef broth. Steep the saffron threads in a ladle of hot broth.
  2. Soften the onion in butter. Toast the risotto rice, then pour in the white wine and let it evaporate.
  3. Add hot broth a ladle at a time, stirring, for about 16 minutes.
  4. Stir in the saffron broth for the last few minutes.
  5. Off the heat, beat in cold butter and grated parmesan. Taste for salt and serve all'onda, quite loose.
