Method

  1. Heat vegetable oil in a wide pan over medium heat. Sit the frozen pork dumplings flat-side down. Fry 2 to 3 minutes until the bases are golden.
  2. Pour in the water and cover at once. Steam 6 to 8 minutes until the wrappers are tender and the filling is hot.
  3. Uncover and let the leftover water cook off so the bases crisp again.
  4. Mix soy sauce, rice vinegar and sesame oil for dipping. Scatter spring onion and serve.
