  1. Season the pork with salt and pepper and grill over high heat, 4-5 minutes per side, until golden and cooked through. Cut into small pieces and set aside.
  2. Cook the 400 g of spaghetti in 4 L of well-salted boiling water, 8-10 minutes, until al dente. Before draining, reserve a cup of the cooking water.
  3. Sauté the grelos in the olive oil with the sliced garlic, about 4 minutes, until wilted but still green.
