Method
- Cut the silken tofu into cubes. Heat vegetable oil over medium heat. Fry ginger and garlic 1 minute, then add the ground pork and break it up until cooked.
- Stir in Sichuan peppercorns, dried chilies and spicy bean paste until the oil turns red.
- Pour in chicken stock and simmer 2 minutes. Stir in cornstarch mixed with water until the sauce thickens.
- Slide in the tofu and toss gently 3 minutes. Add sesame oil, sugar and spring onion. Serve with rice.
