Method

  1. Cook the Japanese short-grain rice. Season the pork loin with salt and black pepper, then coat in flour, eggs and panko breadcrumbs.
  2. Heat vegetable oil in a pan. Brown the cutlets, then finish in a 200C oven until cooked through. Slice.
  3. Simmer onion in dashi, soy sauce, mirin and sugar.
  4. Lay the sliced cutlets in the broth. Pour beaten eggs over and cover until just set.
  5. Serve over the rice with spring onion.

Panko is at Continente. Dashi powder or caldo de galinha both work in the don broth. Molho tonkatsu is optional on the side; the bowl is already seasoned.
