  1. Salt the cabbage, rest 10 minutes, and squeeze dry. Knead with ground pork, garlic, ginger, spring onion, soy sauce, sesame oil, sake and black pepper.
  2. Fill gyoza wrappers, dampen the edge, and pleat closed.
  3. Heat vegetable oil. Sit the gyoza flat-side down until the bottoms brown.
  4. Add water, cover, and steam until the water is gone. Uncover to recrisp.
  5. Serve with soy sauce and rice vinegar.
