  1. Boil the peeled, chopped potatoes in salted water, 20 minutes, until a fork goes through without resistance. Drain and mash them while still hot with the warm milk, the butter and salt, to a smooth purée.
  2. Sweat the chopped onion and garlic in the olive oil over medium heat, 5 minutes, add the diced tomato and then the minced meat; brown for 8 minutes, breaking up the lumps with the spoon.
  3. Add the tomato pulp, season with salt and pepper and let it reduce for 5 minutes, until the sauce clings to the meat.
  4. Spread the meat in a baking dish and cover with the purée. Brush with the beaten egg yolk.
  5. Bake at 200 °C for 20 minutes, until golden.
