Method
- Cook the 340 g of long-grain rice in 680 ml of salted boiling water, covered and over low heat, 10-12 minutes, until the water is absorbed. Rest for 5 minutes and fluff with a fork.
- Cut the turkey breast into escalopes about 1 cm thick and season both sides with salt and pepper.
- Coat each escalope in wheat flour, then in beaten egg and finally in breadcrumbs, pressing so the coating holds.
- Fry in hot olive oil, 3-4 minutes per side, until golden and crisp. Drain on kitchen paper.
- Serve with the rice, the lettuce dressed with salt and a drizzle of olive oil, and a wedge of lemon.
