Method

  1. Cook the 340 g of long-grain rice in 680 ml of salted boiling water, covered and over low heat, 10-12 minutes, until the water is absorbed. Rest for 5 minutes and fluff with a fork.
  2. Cut the turkey breast into escalopes about 1 cm thick and season both sides with salt and pepper.
  3. Coat each escalope in wheat flour, then in beaten egg and finally in breadcrumbs, pressing so the coating holds.
  4. Fry in hot olive oil, 3-4 minutes per side, until golden and crisp. Drain on kitchen paper.
  5. Serve with the rice, the lettuce dressed with salt and a drizzle of olive oil, and a wedge of lemon.
