  1. Toss pork shoulder cubes with lemon juice and oregano. Rest 20 minutes.
  2. Grate the cucumber, squeeze dry, and stir with Greek yogurt, garlic, dill, olive oil and salt.
  3. Thread the pork onto skewers. Brush with olive oil, then salt and black pepper.
  4. Heat a grill pan. Cook the skewers 8 to 10 minutes, turning until charred. Whisk more olive oil with lemon for ladolemono and drizzle over the hot pork.
  5. Warm the pita bread. Serve with tomato, red onion and tzatziki.
