Method

  1. Cook the Japanese short-grain rice. Beat the eggs with sugar, soy sauce, dashi and salt.
  2. Heat vegetable oil in a pan over medium-low. Pour a thin layer of egg, roll when just set, and push to the back.
  3. Oil again, pour more egg, and roll the first omelette over it. Repeat until the eggs are used.
  4. Rest, then slice.
  5. Serve with the rice and cucumber.
