  1. Cook the Japanese short-grain rice. Rub the salmon fillets with sake, pat dry, and salt both sides. Rest 30 minutes, then pat dry again.
  2. Grill or bake at 220C skin side up until the salmon is well done and flaky, 10 to 12 minutes.
  3. Steam the cabbage until just tender. Slice the cucumber.
  4. Plate rice, salmon, cabbage and cucumber. Add lemon at the table.

Shopping tip

Lombos de salmao, sal grosso, arroz para sushi. Pepino and couve steam easily. Limão or daikon if you have it. Saque to rinse; skip if you only have salt. Japanese salted salmon is cooked through, not pink sushi.
