Method

  1. Cut the guanciale into strips. Render it with chili flakes until the fat melts and the meat is crisp. Deglaze with white wine and set the meat aside, leaving the fat in the pan.
  2. Add canned peeled tomatoes and simmer 10 minutes. Season with a little salt.
  3. Boil the spaghetti until al dente. Toss with the tomato, return the guanciale, and take off the heat.
  4. Add pecorino and black pepper, tossing until the sauce clings. Serve at once.
