  1. Rinse the red lentils. Simmer with turmeric, salt and water until soft and mashable, about 20 minutes. Mash lightly.
  2. In a pan heat oil. Soften onion, then ginger, garlic and green chilli. Add tomato, chilli powder and garam masala until pulpy. Stir into the dal and simmer 5 minutes.
  3. For the tadka, heat ghee. Sizzle cumin seeds, garlic and dried chilli until fragrant.
  4. Pour the tadka over the dal. Scatter coriander and serve.

Lentilhas vermelhas are everywhere. Toor dal is harder. Ghee or manteiga for the tadka. Hing/asafoétida is optional and often missing.
