Method
- Preheat the oven to 200 °C. Butter an oven dish of about 30 × 20 cm with 10 g of the butter.
- Cook the penne in 4 L of boiling water with 1 tablespoon of salt for 2 minutes less than the packet says (it finishes in the oven) and drain.
- While the pasta cooks, chop the onion and garlic. In a pan over medium heat, melt the remaining 20 g of butter and soften the onion for 4 minutes; add the garlic and stir for 1 minute.
- Add the passata, 150 ml of water and half the oregano; season with salt and pepper and simmer for 8 minutes over low heat.
- Cut the ham into strips and slice the olives. In a bowl, toss the pasta with the sauce, ham, olives and half the mozzarella, and spread it in the dish.
- Top with the rest of the mozzarella and the oregano and bake for 20 minutes, until the cheese melts and browns at the edges. Let it settle for 5 minutes before serving.
Shopping tip
Brazilian presunto is fiambre (cooked ham) in Portugal; Portuguese presunto is cured ham and does not work here. Bagged grated mozzarella melts like the muçarela of Brazilian snack bars.
