Method

  1. Toast the panko breadcrumbs on a tray until light gold. Mix egg, mayonnaise, Dijon mustard, flour, salt and black pepper into a batter.
  2. Coat the chicken thighs in batter, then press into the toasted panko.
  3. Set on a rack, spray with vegetable oil, and bake at 200C for 25 to 30 minutes until the crumb is crisp and the chicken is cooked through. Air-fryer: 200C about 18 minutes, turning once.
  4. Rest 5 minutes and serve.
