Method
- Cook the Japanese short-grain rice. Heat sesame oil and brown the pork loin until no longer pink.
- Add onion, carrot, potato and daikon. Stir to coat.
- Pour in the dashi and simmer 15 minutes until the vegetables are tender.
- Turn off the heat. Dissolve the miso paste in a ladle of broth and stir it back. Add ginger. Do not boil.
- Finish with spring onion and serve with the rice.
