  1. Cook the Japanese short-grain rice. Heat sesame oil and brown the pork loin until no longer pink.
  2. Add onion, carrot, potato and daikon. Stir to coat.
  3. Pour in the dashi and simmer 15 minutes until the vegetables are tender.
  4. Turn off the heat. Dissolve the miso paste in a ladle of broth and stir it back. Add ginger. Do not boil.
  5. Finish with spring onion and serve with the rice.
