  1. Simmer red lentils with water, turmeric, tamarind paste and salt 25 minutes until very soft.
  2. Heat vegetable oil. Sizzle mustard seeds, then fry onion, curry powder, ground coriander and dried red chili 3 minutes.
  3. Boil green beans and carrot 5 minutes. Stir vegetables and the spice mix into the lentils.
  4. Taste for salt and scatter coriander.

HIGH RISK. Sambar powder is a specialty. Use caril em po plus extra mustard seeds and ground coriander as a stand-in, or hunt the world-food aisle. Pasta de tamarindo is medium; lemon plus tomato if missing. Folhas de caril optional. Lentilhas vermelhas and feijao verde are easy.
