Ingredients

Check ingredients as you prepare them. Changing portions resets the checks.

Method

  1. Heat the oven to 200 °C. Scrub the potatoes well and dry them. Do not peel them.
  2. Spread the coarse salt over a baking tray, set the potatoes on top and roast for 45 to 50 minutes, until a skewer goes in without resistance.
  3. Take out the tray and, with your hand protected by a folded tea towel, punch each potato (or press with the bottom of a glass) to split it open without breaking it apart. Shake off the excess salt.
  4. In a small frying pan, warm the olive oil with the sliced garlic over low heat for 3 minutes, without letting the garlic brown.
  5. Pour the oil and garlic over the potatoes and return to the oven for 5 minutes. Serve hot.

Shopping tip

Look for small or new potatoes, sold in bags; large ones also work halved but lose the punched effect. The coarse salt stays on the tray and does not over-salt the potatoes.
