Method

  1. With a peeler, take the lemon peel off in wide strips, without the white pith.
  2. In a pan, bring 250 ml of water to the boil with the salt, lemon peel and cinnamon stick. Add the carolino rice and simmer for 8 to 10 minutes, until it has absorbed almost all the water.
  3. Heat the milk in another pan and add it to the rice one ladle at a time, stirring often and adding more only once the rice has absorbed it. Continue for 25 to 30 minutes over low heat, until the rice is very soft and creamy.
  4. Add the sugar and stir for 5 minutes. Turn off the heat and remove the lemon peel and cinnamon stick.
  5. Separate the eggs and beat the yolks in a bowl; stir in 2 tablespoons of the hot rice; pour the mixture into the pan and stir for 1 minute over the lowest heat, without letting it boil.
  6. Pour into a serving dish or small bowls, let it cool and dust with the ground cinnamon in stripes or patterns.

Shopping tip

Carolino rice is essential: its starch makes the cream. Keep the egg whites in the fridge for farófias or a mousse.
