Method
- Fill a pan with 4 L of water, salt it and bring to the boil. Cook the 400 g of penne for 11 minutes, until al dente, and drain without rinsing — start the sauce while the water heats so everything is ready at the same time.
- Heat the olive oil in a wide frying pan and sauté the chopped onion and garlic for 3 minutes; add the pepper and courgette in small dice and the sliced mushrooms, season with a pinch of salt and cook for 8 minutes over medium-high heat, stirring, until the vegetables are tender but still have bite.
- Add the diced tomato and the tomato pulp, season with the oregano and the rest of the salt, and let it reduce for 8 minutes over low heat, until the sauce thickens and coats the vegetables.
- Fold the drained pasta into the sauce and keep it on the heat for a further minute, stirring, so the pasta takes up the flavour. Serve straight away.
