Method
- Mix miso paste, sesame paste, soy sauce, garlic, ginger, sesame oil and a pinch of sugar. This is the tare.
- Heat a little vegetable oil. Fry the tare 30 seconds until fragrant. Pour in chicken stock and dashi and simmer gently.
- Add the chicken thighs and cook until no pink remains. Slice the chicken. Taste for salt.
- Boil the ramen noodles in a second pot. Drain well.
- Bowl the noodles, ladle the miso broth, and top with chicken, frozen corn, butter, bean sprouts, eggs and spring onion.

HIGH-RISK: pasta de miso plus tare. Pasta de sesamo or tahini sits in the health aisle; miso is patchy at Continente and reliable in Asian shops. Noodles ramen or massa instantanea without the packet. Milho, manteiga and rebentos de soja are the easy Sapporo toppings. Discard instant seasoning sachets.
