Method

  1. With a knife, make shallow diagonal cuts along the chouriço every 2 cm, without cutting through.
  2. Place the chouriço on the rack of the clay grill and pour the aguardente into the base. Keep it away from curtains, the extractor hood and anything flammable.
  3. Carefully light it with a match and let it burn for 8 to 10 minutes, turning the chouriço with a long fork halfway, until the skin crackles and the cuts open. If the flame dies too soon, add a little more aguardente, but only once the flame is out and the grill has cooled for about 5 minutes (never onto a live flame).
  4. Slice into rounds and serve hot. Without a clay grill: roast the scored chouriço on a tray at 200 °C for 15 minutes, and bring it to the table without the spirit.

Shopping tip

Use cured pork chouriço (not the boiling kind). Clay chouriço grills and aguardente bagaceira are sold in hypermarkets and homeware shops; grape-wine aguardente works the same.
